Easy Loaded Veggie Sandwich

Ingredients:

– 2 slices whole grain bread – 2 tbsp hummus – Leaf lettuce – 1 small tomato, sliced – ¼ cucumber, sliced – ½ avocado, sliced – ¼ cup shredded carrots – Sprouts or microgreens – Red onion, thinly sliced – Salt & pepper to taste

Wash and thinly slice tomato, cucumber, red onion, and avocado. Shred carrots and rinse sprouts for a crisp, fresh texture.
